Skinny Chicken Salad



Ingredients

  • 1½ pounds boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 2 dried bay leaves
  • ½ cup plain, non-fat Greek yogurt
  • ¼ cup light mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup red seedless grapes, cut in half lengthwise (20 grapes)
  • ½ cup coarsely chopped unsalted, raw pecans (34 pecans)
  • 1 cup diced celery (about 3 stalks)
