Quinoa Patties



INGREDIENTS:
  • 2 1/2 c. cooked quinoa at room temperature
  • 4 eggs, beaten
  • 1/2 t. salt
  • 1/3 c. finely chopped chives or green onions
  • 1/3 c. finely chopped yellow or white onion
  • 1/3 c. Parmesan cheese (goat or feta cheese is good, too)
  • 2-3 cloves of garlic, finely chopped
  • 1 c. bread crumbs
  • 1 T. olive oil, for cooking
