Sweet Potato Unstuffing



INGREDIENTS
  • 1 sweet potato, peeled and cubed (1 ½–2 cups, ¼–½ inch cubes)
  • 1 1/2 cups halved or quartered Brussels sprouts
  • 2 medium carrots, chopped (3/4–1 cup)
  • 2 celery ribs, chopped (3/4–1 cup)
  • 8 oz. mushrooms, sliced
  • ½ medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 medium apple, cored and diced
  • 1 tsp. fresh thyme (½ tsp. dried)
  • 1 tsp. fresh rosemary or sage (½ tsp. dried)
  • ½ tsp. chili powder
  • ¾ tsp. sea salt
  • 3 Tbsp. avocado oil or oil of choice
  • ½ cup dried cherries or cranberries, unsweetened if possible
  • ⅓ cup pecans, chopped
